Sustainable Coffee Processing Methods
- Natural Process:
Also known as the dry process, this method is traditional and requires less machinery but more manual labor. Whole cherries are dried without removing the skin, taking about 20 days. The beans develop a full body, low acidity, and fruity, exotic flavors. - Washed Process:
This method uses significant water and equipment. Cherries are cleaned, and the pulp and mucilage are completely removed. Washed coffee typically has a lighter body, clean cup, and bright, fruity, floral flavors. - Honey Process:
In this method, the beans are dried with their mucilage intact, giving them a sticky texture. There are three variations:- Yellow Honey: Dries faster (8 days), with a lighter, yellowish hue.
- Red Honey: Dried in the shade, taking longer and producing a reddish hue.
- Black Honey: Dried under plastic covers for the longest time, resulting in deep sweetness and fruity, honey-like flavors. This process is eco-friendly as it uses less water.
